Rustic Apple Galette

Apple Galette


4 apples (6, if they are small)
1/4 cup sugar
chopped pecans

3 tablespoons ice water
1/2 cup cold butter cut into small chunks
1 1/4 cup all-purpose flour
1/2 teaspoon salt



Peel & core apples - slice into 1/4" slices.

Toss apple slices with sugar, nutmeg, cinnamon, pecans, raisins, and 1 tablespoon flour - set aside.

Preheat oven to 400 degrees.


Place flour and salt in food processor, pulse until combine. Add butter and pulse until butter pieces are about the size of peas.

Add the ice water, one tablespoon at a time, pulsing in between. The mixture will not form dough, it will look like crumbles, don't over pulse at this point. 

Sprinkle table or board with flour - pour out crumble mixture and lightly form into a ball - don't over mix. Press into circle and start rolling the dough out until its 1/8" inch thick. This doesn't have to be perfectly round or pretty - remember its going to be rustic.


Place dough onto parchment lined baking sheet - fill the center with the apple mixture and fold in the sides - make sure there aren't any holes you don't want to lose the juice from the mixture.

Brush dough with a beaten egg - I used water and sprinkled a little sugar.


Bake at 400 for 35 minutes.
